Physiochemical properties of encapsulated bitter melon juice using spray drying

چکیده

Bitter melons have been proven with anti-inflammatory and anti-diabetic activities. However, due to its short shelf life bitter taste, the consumption of melon is limited in United States. Among many encapsulation technologies, spray drying a cost-effective method for bioactive compounds. Polysaccharides proteins are vastly used as wall materials The juice can provide protection over compounds juice, mask unpleasant taste. In current study, fresh was obtained from common variety, Indian melon. encapsulated using 3 formulas various material composition core ratios, namely formula 1 (maltodextrin + gum Arabic), 2 (gum Arabic pectin), (pectin soy protein isolate). particle size efficiency were compared among three formulas. physiochemical properties reconstituted form powders terms antioxidant activities, activity properties. results indicated that all juices showed lower juice. particles, particles exhibited highest property. best activity. findings will help develop natural polymers desired stability, bioaccessibility health benefits Also, guidelines fruit vegetable industrial practices.
